No, I wouldn’t add Oxo cubes to the rice if you’re already serving it with beef madras. The curry and its sauce should bring enough flavour, and adding a stock cube can make the rice too salty or muddy the spice balance.

Better option

Use plain basmati rice, or cook it with a little salt and maybe a knob of butter or a bay leaf for extra flavour. If you want the rice to match the curry a bit more, a small amount of cumin, turmeric, or onion cooked into the rice works better than a stock cube.

When a cube does make sense

If you’re making savoury rice on purpose, a small amount of stock can work, but keep it light and taste as you go. Recipes for braised or savoury rice do sometimes use a beef stock cube, but that’s a different style from a curry side.

Simple rule

  • Plain rice: no cube.
  • Flavoured rice for curry: tiny pinch of spice or a little butter.
  • Very plain curry sauce: half a cube at most, and only if you’re sure it won’t over-salt things.

For beef madras, I’d go with fluffy basmati and let the curry do the heavy lifting.
