To stop messages from going to your Apple Watch, turn off Messages notifications for the watch in the Watch app on your iPhone. Apple Community guidance says to open the Watch app, go to My Watch > Messages, choose Custom , then switch off Show Alerts , Sound , and Haptic.

If texts still show up on other Apple devices

For regular SMS texts, Apple says to go to Settings > Messages > Text Message Forwarding and turn off the devices you do not want receiving messages. For iMessages, you may also need to sign out of iMessage on the devices you do not want connected.

Important limit

You generally cannot remove the Messages app from the Apple Watch itself, but you can stop notifications from appearing on it by changing the watch notification settings.
