Mount Olympus challenge mode scales you down to level 30.

A couple of extra notes:

  • Your stats and spells are scaled to that level while you’re inside the instance.
  • You also can’t change spell decks while in the challenge instance, and standard-only spells are disallowed.

TL;DR: Level 30.
