Most of the ethanol you drink is broken down by liver enzymes (especially alcohol dehydrogenase) into acetaldehyde and then into acetate before being further converted to carbon dioxide and water. Other tissues like the stomach and brain can contribute slightly, but the liver does the vast majority of the work.
